I see a lot of you folks talking about vacuum-sealing your Q before freezing, and I have been considering one of the units. Any recommendations/condemnations on make/model/etc?

Look in to the foodsaver or check out the v33 & CG15 at: www.vacuum-sealer-bags.com.
I have the Foodsaver Pro III modem and it does the job for me. No problems with it in the last year or so that I have it. _________________ -Adrian

| I bought one when I was brewing beer pretty heavy, I kept grains and hops sealed with it and now I couldnt live without one, I use it for everything. |

We use the Foodsaver Pro (http://foodsaver.jardendirect.com/products.ad2?ProductID=1524&CatalogID=1000 )
Cannot say enough good about it. We use it constantly for meats, veggies, whatever we freeze. You can also get a cap that will vacuum seal canning jars, and I use that for dry stuff that doesn't need to be frozen, but should be air tight.

Food saver. You can get the bags cheaper at wal mart or Target.
A food saver is essential. I need to post a pic of all of the stuff I have in my deep freezer. I had some frozen pulled pork last night. It was still nice and moist. Having some smoked turkey for lunch today that came out of a freezer bag. Hmmm. True.
Sam's Club also has them in a combination of bags & rolls. I actually find that the rolls are a much better deal. You simply make bags from the rolls, the right length for whatever you need. _________________ New Braunfels Offset Smoker

Wouldn't give mine up for anything. Also helpful for marinating. When I make corned beef (Can you believe it? Another way to ccok a brisket!), The vacuum bag is great for brining, and fits in my refrigerator much easier. _________________ When they say "Do not use Gas to start grill"...They mean it! |

Here are some ribs packaged up. I smoked these for 3 hours, wrapped in foil and cooked for two more, then put them in the fridge till they were cool, then vacuum sealed them.
Now I cut the bag and reheat in the oven. I get them hot in the foil, then remove and let them dry a bit.
Here are the ribs ready to eat. Notice the bone pulling away...
I've also cooked ribs plumb done, cut, cooled, vacuum sealed, and froze. These I can take out and put in a lunch box. By noon they have thawed and reheat very nicely. _________________ "BBQ may not be a religion in Texas, but the two institutions are closely associated."

| I went to seal something on my Food Saver the other day and it didn't seem to be getting any vacuum suction. It just sealed the bag with the air still inside. This is only the second time I've used it. Any ideas what the problem might be? |

Could be a couple things...1) the bag may not have been over the suction area. It will continue to cycle and seal the bag even if you haven't sucked any air out of the bag. 2) the bag may have had a leak somewhere. You can always cut the edge off the bag and reseal it. _________________ Mike

Ditto the above. The end of the bag needs to go over the "well" or it will not suck any air out and just seal the bag. This is what you WANT to do if you just need to seal the bag (freezing beans or something non-solid).
Or you might have bones. I smoke catfish whole and occaisionally, there will be a bone that punctures the bag when it seals. Had this happen with the foil once too. Just check for sharp edges.
Another thing: Most of these sealers come with a couple of containers. These make great rub storage. Keeps it fresh longer. _________________ "BBQ may not be a religion in Texas, but the two institutions are closely associated."
