| I have a quick question about cooking butts and ribs at the same time. I have a couple of folks wanting ribs and some wanting me to cook boston butts. Can this be done? I have cooked my butts at 180-200 and my ribs are usually at 220-230. I have a homemade reverse flow smoker that has a lower and upper rack, also the main cooking chamber is only 6'x2'. What do you guys think? THANKS IN ADVANCE FOR YOUR HELP!!! |

Me personaly I think cooking butts at 180-200 is to low a temp for me.
Cook the ribs + butts at the same temp of 220-230 should be fine for both meats.

I second that. Butt is allways at 220-230 for me and ribs can go up to 240 depending what all in the smoker. Good luck. _________________ Andy

Everybody has opinions and here is mine... at 180°-200° cooking temp you are more warming the meat to death than cooking it... Pork Butt and spare or loin back ribs are meats that can be done very well at higher temps.
I really like to cook ribs a bit hotter than most, usually around 275° if cooking only ribs. Since your cooking butts too, try cooking at around 250° and put the ribs on the top shelf over your butts... Should help both from drying out and also speed up your cook times considerably.
My $.02.
