Well I decided to cook two briskets for Monday but it was not until 2:00 when I got them on my pit. I did get a beautiful batch of ABT's cooked though. I have also been drinking several Shiner Lights tonight so Life Is Good! I should be done around midnight tonight, wish me luck!

It went well, the briskets are great and this time I smoked them with hickory which is a first for me, I did notice there is not as much smoke with it and my fire was much hotter than oak. I have not tasted the meat yet but will post my thoughts on it when I do.


BTW SICBBQ, that sauce recipe you make, what would you compare it to that is on the store shelf.

If I had to compare I would have to say Stubbs, it has a good tang to to it, some sweet and a nice spice. It is still a work in progress but it is very good, my work has been put on hold lately since I found Moe Pritchets BBQ Sauce.... Man that stuff is so good you crave more when your done. It has what I would call a "close to perfect" taste, it is the first sauce I have tried where the meat is still the star of the show and the sauce is just good support.
