Ive been making a meatless version of this since I started cooking for a college football team last year - I make it for 100 + or - every week vending [ I use shells for vending, they hold better w/o expanding soo mucch] and sell out most every time!! I use cheese sauce instead of the soup, and even change up the other cheeses a bit - but its ALWAYS a hit - wherever I serve it! Thanks Alien!!! _________________ Money Maker

This is an old post, but elsewhere saw a reference to smoked Mac and Cheese and said 'Dear God that sounds GOOD!'

I'm probably cooking a double batch of this tomorow (sat) evening. what wood should I use? My first instinct is to use mesquite and to oversmoke the meat. My second choice would be hickory. I haven't played with the apple enough to play with that in a show off dish. _________________ It's all about the smoke!

By now your water should have come to a boil (approx 10 minutes.) Place the pasta in the water and allow it to cook for approximately 20 minutes until it comes to a boil again. Once the pasta had come to a boil (it’s not done yet) remove from heat and sit to the side.
So do you cook the noodles for 20 mins or just till the water boils?be that 5 mins or 25 mins? _________________ Good BBQ is all smoke and beers!

Pasta: Bring water to a rolling boil then put in the dry pasta. Cook 10-12 minutes MAX. Beyond that you're turning it into paste.

Sigh .... found this thread by 'accident,' wasn't looking at smokers, Google just got me here ... and $250.00 later all my 'stuff' is coming at me via UPS. First 'box' so small stuff yesterday ... the BIG BOX should be here some time today.

YAAAAZER!
Small box delivered yesterday ... THE big box early this PM. Minor assembly required, and I do mean minor and the new "Masterbuilt Model 20070910 is up and 'seasoning' as I type.
This thing (for one guy) is HUGE; even the small refrigerator I had in dorm room at University wasn't this big. As for 'some assembly required it really amounted to stripping off all the packing material and installing the electronic timer on top. Took me far longer to get all the wrapping stuff off than the actual assembly (one bit).
Only 'down side' is the instructions included are really minimal; how to put/level/where things go/do this/don't do thats. But as for actual 'smoking' almost zero info.
Off to Google again .....

You betcha PE. Did a bit more 'research' and found it on sale via Amazon for under $200.00. Worst 'review' I found was 4.5 out of 5 stars. The 'some assembly required was absolutely minimal. Took me longer to get the thing out of the box and connect the one and only 'loose part' (the control panel). Save stripping off all the protecto paper the unit was ready to go right out of the box.

Dear Lord I stink.
But a good stink, me thinks.
Passed on the Chicken and went for a small Pork butt with a touch of 'rub.'
Interesting to stick a meat thermometer into the smoke stack outlet and see what it says vs the 'diggie' read out. Have ZERO idea which may be right, My Bad.
SUGGESTIONS PLEASE!!!
Ya, Ya .... Newbies are dumber than stumps, some of us just ask 'what's the deal' questions after getting the heck confused out of them with the search function.

My friends were down at the dam camping and I hauled my toys down and made them dinner. I made this Mac N Cheese and some ABT's and some mesquite chicken.
I started in the kitchen. I boiled the water in 5 mins, dropped in the noodles and had it up to boil in another 3-4 mins. that wasn't anywhere near the 40 mins mentioned so I let it boil for another 2 mins and slid it off the burner. this is where I screwed it up. I dumped out most the water and left enough to keep the noodles wet and threw everything in the pickup for the 15 min drive to the river. I already had all the slicing and dicing done and chilled. I got to the dam and set up two grills. I did the mac n cheese, some onion and the ABT's over hickory and the chicken over mesquite.
when I opened the pan with the noodles, they were huge and they fell apart thru the rest of the process. I think I should have ran them under cold water before I left the house. I made them and they looked like a big cheesy glob from a school cafeteria. but they tasted great and they went over real well. everyone went back for 3rds.
the ABT's were cool too because half of them were mild as a bell pepper and the other half would blow the top of your head off. we were all laughing and hurting on the (jap) russian roulette. one guy was sitting back telling everyone they weren't hot. everyone was real impressed until I pointed out his red checks and forehead, all of the sweat and how his eyes looked like he was stoned.
it went real well but I will have to keep from over doing the noodles next time. as bad as I messed up, they were the best mac-n-cheese I ever had.

Yes, we do exist, yes we even like reading smoker BBQ websites! Living in apartments near large cities that frown on grills tends to slow down the progress towards getting a smoker. I now live in a good house and will likely be buying a smoker next spring (and will be coming here for help!)
This recipe looks spectacular enough that it could be done both on the stovetop and in the oven or grill? I understand it will not have some of the flavor of the smoker, but still should be good.

You can buy hickory smoke extract at most large(r) food stores. Have used this in the past, so just a caution if you decide to give it a try: "A little goes a looooong way!"
