Actually, now that I have your attention, I do not yet have a smoker.
Yes, we do exist, yes we even like reading smoker BBQ websites! Living in apartments near large cities that frown on grills tends to slow down the progress towards getting a smoker. I now live in a good house and will likely be buying a smoker next spring (and will be coming here for help!)
This recipe looks spectacular enough that it could be done both on the stovetop and in the oven or grill? I understand it will not have some of the flavor of the smoker, but still should be good.
Alien, any thoughts?

Yes, you can do it in an oven if needed, but the real flavor is the smoked cheese. You might also consider a small smokey joe that sits on the table top and used charcoal and wood chunks. It will work in a pinch. _________________ https://www.linkedin.com/in/michaeloberry |

I just finished this off for dinner, and man is it filling...I'm stuffed!
The only thing i'm kicking myself for is not marinading the skirt steak first in Lawry's beef marinade. That would have sent the flavor over the top!
Also, the foil pan ended up filled to the very brim and nearly overflowed, and here I thought the pan would be way too small!

Just put the dish in the smoker, I just used a glass baking pan - I don't do the dishes.
So I have 2 racks of Beef Ribs, Brisket and Alien's Mac n Cheese sitting in the smoker. I won't have to cook for the rest of the week.

Perhaps you could use some store bought smoked cheddar to get the desired flavor. May not be ideal, but a possible option for for those who are smoker-less. _________________ I was taught to respect my elders. It's just getting harder to find them.

I made 2 batches of this last weekend for a group of friends. WOW, very tasty. LOTS of positive comments. I made it like you said only I had tossed in some smoked brisket. Id definitely make it again. I wouldn't go changing much if anyone wants to try to make this......its perfect the way it is.
I did find that using gloved hands was the way to mix it up ....... much easier than a spoon . |
