yes! I think the guage is wrong. I cooked 3 boston butts two fatties and 6 racks of baby backs yesterday in the pouring rain. The guage must have been reading higher than it was in the cooking chamber. It would spike up to 275-300 range and I would cut backl on my air too cool her down. Igot tired of being out in the rain after about 12 hours. I wound up finishing the butts and ribs in the oven. I was not real happy. It was the first time out. Kind of took the wind out of my sails a little. I just have to learn where she like to cook @ I usually cook in the 225-250 range. According to the guage I will be cooking in the 275-350 range on this thing. We shall see. Any help with you guys that have them would be great.

That is a great looking cooker, one I hope to own sometime this summer.

first thing I would do is turn the thermometer into a paper weight and have a probe at grate level. I am betting you were closer to 225-250 at grate level than you think.

I second that. Dont get discouraged, you have a kicka$$ smoker. You can keep her at 250 all day w/ a little practice. Im sure others w/ langs will chime in.

That is a really nice looking cooker and don,t get discouraged.

My first few cooks on my Horizon was a real learning experience and practice, practice, practice with firebox management and confidence will come with a few cooks and you will be off and running with the best of them.

I did ribs a couple of times until I felt like I could control the firebox then went to pork butts.

Lang makes a great cooker and it will serve you well over the years.

I have a lang 60. The temp. gauge reads about on for the top rack, and about 25 degrees high on the lower rack. The cooker seems to find it's happy place at about 250 to 275 on the gauge, and that works real well for me. Once I got it tuned in, I have never had to adjust the vents.

On second thought that smoker will probably never hold a good smokin temp. Your beat bet is to run up to NY and drop it off at my house. It is definitely a lemon. I am sure I can use it for something.

Just take your time and you are going to be fine.

The Lang 60 is a great cooker you just need to get used to it.

I was very disappointed with my first couple of times with my new 60. However after I got the hang of the firebox, it's a pretty awesome cooker. You'll get the hang of it quickly.[/b]

well, I built a charcoal basket at work last night out of some expanded metal. I will see how that helps this weekend. Maybe I can find some spares on sale somewhere.

I got my Lang 60 last year in October 2 days before the competition. I too had some doubts about it as I was having trouble with it. But the more I use it the better I like it. Got some steel off of Ebay and going to have a fire box made and I may get the Guru also. It just takes time to get used to it. We made some great brisket the other day.

Well, my second cook went sooo Shocked much better! That charcoal basket is the secret !!! Wow! what a difference! Just load that thing up with about 10 lbs of charcoal and threw some logs on top of that and a lit chimney ontop and it heated that cooker up and she stayed perfect for hours. I just threw a log on every 45 min and it just cruised along perfectly! I did three racks of spares st.lious style and they came out pretty good. Not to shabby for the second cook!. here are some pics:

looks good Ed. when you add more wood to your cook, do you ever throw and more coal in as well? Or was there always a nice bed of glowing coals.

there was always a nice bed of glowing coals...that being said, after about 3 hours I added a chimney full of unlit coals. I was trying to stay on top of it. It was a big mistake because my temps dropped for about 15 minutes while the new charcoal lit. In hindsight...I didn't need the extra coals.The fresh log every hour turns into all the hot coals I needed. That basket worked beyond my expectations. It kept all the coals together and only allowed the ash to fall.

Whats is the basket sitting on? Is it easy to rake out dropped ash from the firebox, or is that really necessary?

basket is sitting on the fire grate. I didn't need to scoop out the ash during the cook. As I look at the pic again, I had the grate in side ways. If it was in the other way I could scoop the ash out easily.

I'm still a rookie with my 60 so I'm still learning the ins and outs as well. When I fire it up I put a small chimney of lit charcoal into the basket and then add 2-3 splits of wood on top. Pretty sure I learned to do that from this site. It works for me. Then I add a split every 45mins-1hr. I wasn't lucky enough to have met Ben Lang and ask questions. Is how you filled the box the way Ben mentioned to fire it up?

No Ben never mentioned anything about a charcoal basket. I had to make it. I am still wondering how he expected anyone to build a fire on top of that fire grate that came with the cooker. When the logs burned the hot coals would fall thru the grate and it was like having two fires on top of each other. The basket helped keep a nice bed of coals.
