Those trout look Delicious!!!
There are 2 things my Opa taught me to make well, smoked fish and Beer!!! I learned the meats on my own!!! Do you ever have a problem with the fish falling off the hooks? I usually butterfly mine or fillet them and leave the skin on then smoke on the grill instead of hanging them.

Again, nice job!!!!

Basically the same technique but watch for freezer burn and remove it if present.

Lean fish like Crappie & bass (what the hell are you doing eating Bass anyways?) are not good smoking choices, the better smoking fishes are the oily fleshed varieties like salmon & some trout species.

White fish and lake herring are also excellent for smoking.

You haven't had smoked fish till you try mullet smoked over buttonwood (mangrove) with a Everglades Heat rub....But I have to admit those trout look great....

I have to agree with the lean fish comment. Crappies, Bluegills, walleyes, all deserve to be pan fried to golden perfection then served with some lemon.
Bass Rolling Eyes deserve to be released back into the water when caught. Very Happy
