ok yeah i know i just bought a bar-b-chef offset smoker.and yeah i really like it.
BUT
there is no way im going to be able to move that thing around and it seems silly to to light that big thing up just to do a rack of ribs,or one tri-tip.
so whats my solution?
im thinking weber smokey mountain!
this way if im doing a small meal or want to take the smoker over to a friends house,it wont be such a hassle.
plus i feel i have just been avoiding it the whole time.it seems like that little bullet smoker holds temp better than some of the bigger off sets anyway.without any mods!
can anyone else add any pros and cons to the w.s.m.? _________________ WSM 22.5

You can't go wrong with a WSM. Small or large cook. It doesn't matter.
I've had 2 briskets, 3 slabs of spares and 24 bratwursts in one of mine all at the same time.
They are virtually set it and forget it once you get them going.
You can easily get 12-16 hours of cooking time out of them on one ring of charcoal.
They are easy to clean and maintain.
There is a large community of WSM users over at the Virtual Weber Bullet website and they are as friendly and helpful as the folks here on the Ring. _________________ I only believe in two basic food groups... Chili & BBQ

honestly, I wouldn't get a stoker or bbq guru with the bullet smokers. I got one and tried it with my new frontier, and I'm pretty sure it made me use MORE coal than I would have as it was trying like heck to up the temperature. I know Roxy uses one successfully (which reminds me I need to PM him with some questions along these lines.)
From everything I've read about the WSM it drives itself. |

Nothing wrong with wanting another smoker there Big Jake.
But..........I just don't see the problem of just one or two slabs taking up too little room.
I've lit up "Old Bessie" (40"x8 feet) to cook one slab of salmon on occasion- like New Years Eve for two slabs!
But your reasoning might make getting the purchase by "the boss" easier!

Cool. That smoker requires zero seasoning, but it does run hot on the first few cooks, due to the enamel on the inside being 'shiny' and radiating heat. Once you get a good coating of grease on there, say 1 or 2 cooks, it'll hum as low or high as you want it. Plan a high-heat cook, sausage or chicken maybe, for your first. I did an overnighter for my second. Good luck, keep us posted with pics! _________________ --

Yep.... You will both be even more stoked after you use them.
I know some people that clean them out after each cook but like rprata said... Let some grease and gunk build up on the inside and they hold their temps incredibly well.
Both of mine had some temperature fluctuations the first time I used them but after that they work like a charm.
About the only thing I ever do to clean mine is run a medium stiff vegetable cleaning brush (not wire bristle) around the inside of the lid to knock out some stuff that builds up in there. It kind of looks like rust but it's not.
Letting it get some buildup also helps to seal it and make it more airtight. _________________ I only believe in two basic food groups... Chili & BBQ

I haven't used my off set since I got my WSM. Great smoker. The only mods I did were to add a thermemeter to the top and substitute a Brinkman charcoal pan for the Weber water pan.
I wouldn't hesitate to buy another, if this one ever wears out.
