Okay fellas as some of you know I will be starting to sell pulled pork sammies, so here is a question. I would like to smoke two buts with one slather on both but, with two different types of rubs, how do I tell them apart and what would be a good 'judging format to use? and should I try the same finishing sauce on both or do two different sauces? I know that this might not make since but this will be my first taste testing gathering and this info. is important for the business. And i want to make a careful log of everything. Or am I going about it all wrong? how would you guys do it? I'm expecting about 12-15 people. do I give out whole sammies or just half sammies, or the pulled pork alone? Sorry so long winded but as usual I have allot of questions. thanks guys. I will be doing this on sunday during halftime, of course  |

If you want to compare rubs, then I think that you would only do the rubs differant and everything else the same. To identify the butts while cooking, stick a chopstick in the side of one. Then when you server, put the meat on differant colored platters and give everybody a slip of paper to write their color choice and comments on.
That is how I did my rib rub test,

| thanks allot okie, I thought of a toothpick but a chopstick would work better. and the different color plates would help also. |

I use toothpicks when doing ribs. But for butts and brisket, I use a wooden chopstick (I was thinking, "I need a BIG toothpic" and it can to me). Works great. _________________ OkieJay
