I am pretty new to "The Ring", and still consider myself to be (for the most part) a barbeque novice. Sure, I have cut my teeth on baby back ribs, country ribs, sausage, and pork loins, but recently convinced my fairly traditional family to allow me to step outside the box for Christmas dinner.

My dad and I smoked two 8.5 lb. Boston Butts and six very nice racks of baby backs for all 23 guests to enjoy. Just to further try my hand, I added in a large pan of some smoked baked beans.

Hope you boys enjoy the pics!

I bought the butts from Sam's Club for about $1.29/lb. Worth every penny!

The baby backs came from Sam's as well. This is shortly before going into the fire..... a light mustard slather and good rub-down courtesy of The Rendezvous- Memphis, TN and Fiorella's Jack Stack- Kansas City.

The butts went into the smoker along with my special baked beans about 20 hours prior to the meal. This is the ONLY way to make baked beans boys!

The ribs were added about 7 hours prior to dinner time.... gotta love a full smoker!

And finally, the finished products! Not too bad for my first attempts at pulled pork...... everyone raved about the taste. The only problem...... very few left-overs!

Thanks everyone for all the great info and tips..... I just might progress past "rookie" status.....
