Grab a beer and get comfortable; I took some pictures this time.

This is good eats.....

Here we are with all the prep done, ready to put it together. This time I had some extra ingredients so I added the leftover mushrooms from Pizza Night and took out about 1 1/2 pounds of Buckboard bacon and diced it up.

Here's everything churning in the meat mixer; fine piece of equipment, gets the job done fast.

I take a loaf pan and line it with plastic wrap for easy release and mold the meat in there. I also put a piece of aluminum foil over the filled loaf pan and use that to hold the meat in as I turn it over on the rack. Then the foil keeps it from sticking and becomes like a sled to move the finished product. Works real well.

There they are sitting on the smoker rack; I preload my racks so I dont lose much heat with the door open long.

There they are all wired up ready to smoke.

Here I'm monitoring the cook on my computer.

And on the go I can monitor it on my Palm TX; keep you mobile.

Here they are done on the rack still.

This one is scratch and sniff if you have that peripheral, cant you just taste the pecan flavor? For some reason it looks quite rare in this picture but that might be the bacon or all the tomatoes.

And here's the recipe:

Old-fashioned Meat Loaf- A.K.A "Basic" Meatloaf

Recipe Summary
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 1 hour
Yield: 4 servings

1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Preheat oven to 375 degrees F.
Mix all meat loaf ingredients well and place in a baking dish. Shape into a loaf.
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Oh and I dont do the topping; spoils the flavor......

I'll have to give that a spin. Never thought of choppin the bacon up and putting it inside. Bet that was good.

WOW what a high tech smoker. It looks lke it performs quite well. What aer your thoughts?

Nice rig. Make sure people know what it is when the open it or else you will have a bunch of bomb sniffing dogs around your house and chances are your meatloaf will not make it through the water gun.

I am going to have to try this some time. Although, not as high tech.
