| this is for my x-mas dinner first one on the offset smoker,i am going to use oak&mesquite, the question i have is what would be the best temp and approximate time per pound any help is greatly appreciated thanks.also no brine i am going to inject the bird with creole butter injection. |

When I smoke a turkey I use the same times + temps as I would in an oven. 325-350.
One thing though, Ive never tried the Mesquite on turkey, dont think I would like too unless Im missing out on something.

Mesquite can be rather strong on birds....use sparingly. _________________ Electricity can be dangerous. My nephew tried to stick a penny into a plug. Whoever said a penny doesn't go far didn't see him shoot across that floor. I told him he was grounded. - Tim Allen |

thanks for the input, i have used mesquite on birds before in my charcoal pit tasted great, my plan here was to mainly fire with the oak and from time to time add some mesquite. i guess just follow the cook times like an oven and probe it with the temp guage sounds like a plan i hope to post some pics thanks again  |
