Here are a couple of pictures of my smoker doing its thing during the ice storm. I was smoking some pork butt's and briskets for a party on Tuesday evening. I also did some Jalapeno stuffed sausage later in the day, which I will post later.

Awesome looking meats!!!

A "tip" if you were to take a putty knife (or something similar) and scrape the inside lid of your smoker (hopefully when it is empty), it would not drop those "little black specks" all over your meats.

Is it just me or is there too much smoke and not quite the right color?

TELEKING Youre good! I agree that the color of the smoke is not right. I used some hickory that I had cut up earlier this summer and I thought it was ready, but after I put it in the smoker I noticed the color of the smoke and even a different smell. I knew something wasn't right but didn't have any other wood to put in the smoker. When I served the food that night I could taste the bad wood on the food.
