A PORTABLE handwash station!!! First thing I asked... "Is there ANYONE else out there useing one that I could LOOK at"??
Her reply was..."Well, not that I know of but we are trying to get all of you "grandfathered" caterers in compliance with current regulations".
My reply, was (to be nice) well, let me know when someone ELSE has one so I can go look at it and see if I can incoporate it into my set up.

so your supposed to have it on your rig? what do you currently use for hand washing/hand sanitizing purposes other than gloves? if your grand fathered in then what is the big hurry to update the caterer's? are they looking to fine your if not up to current regs?

Well, I REALLY don't THINK they can force me to comply, as I have been approved with the standards that were in place at the time of application....but they can TRY!!
I currently use (for hand washing) a 5 gallon insualated container (was made for drink water). I have the bucket under it to catch the gray water.
This system has been approved in the past, but that was before these portable sinks were even available.
I will "hold out" as long as possibel...you PRICED those portable sinks?? Start about $800 and go up...at least what I have seen.
It does not have to be ON my smoker, just available in my "portable kitchen" area. _________________ Often imitated but never duplicated |

It sit on top of one of these

You have to hold the button down. on this unit it will stay open without constant pressure on the button. it has a free flow.. That seems the big deal for HD....other than that there really isnt much difference.... _________________ California State Grand Champion-Shake,Rattle & Smoke-July 2007

I changed mine out so it DOES have a "free flow" spicket on it...(from a large coffee maker). So you can tap it for a little water or flip it up to stay on.
The gal that has been "questioning" me has NEVER inspected/seen my setup.

Marv, having been a former inspector you can bypass her scrutiny by making her job as easy as possible. She is required to perform about 6 inspections a day (including driving) and does not have a lot of time to spend, so next time she shows up, give her the tour and dazzle her. If you take your last inspection form and cover those areas in the tour, she will be in and out in a few minutes. When I did my inspections, I had to ask questions because people generally did not know how to run things properly. Well Marv, even up here the HD wants the "gray water" from the handwash to go into a gray water container. So I ran this idea past them, if I were to take a 3 gal container for the fresh water and hook a foot pump to it and then to the sink, then drain into a 5 gal separate container. They said this would be fine as long as there was a soap dispenser and paper towel dispenser as well. The foot pump I got was a Whale foot pump. Here is a link to check out:

| Before I had my catering truck built I used one of those small two bay sinks on wheels you see at Lowes or Home depot and hooked up a poratble Hotwater heater to it. http://www.hotcampshowers.com I was able to plumb this into it and if you were near a water source you can hook it into that via a hose. Total cost around $400.00 Hope this helps. |

Why not spend $200 and comply with the new regs? I don't see how trying to fight with the HD will really help. _________________ Alex

First off, I would like to thank all of you that post. I read this forum quite often and all of your knowledge, experince, and insight has helped start extending my passion of BBQ into catering. So figured it's about time I posted something from my experince. Since I am not in the catering business yet... I don't know if the HD would alow this setup for catering.
This is what my team uses for a hand washing station at BBQ comps, and the health inspector passes us with flying colors.
We use a plastic freestanding sink/tub which has a drain dropped into a potable rv toilet drain tank 15gal. We use a coleman portable intstant hotwater machine sitting on top of the sink, and the intake pump is dropped into a 5 gallon plastic water jug. The colman is free flowing water and is the right temp to keep the inspectors happy.
The colman can be found alot cheaper, I got mine at Joe's Sports for $180.

I guess when ALL caterers (old and new) are REQUIRED to have such a thing...I will happily comply. Ok, not HAPPILY but will comply. So far it is not "required, only STRONGLY suggested".
If I did everything that was "suggested" it would cost me out the behind and I wouldn't be any better off or any safer or cleaner than I am now. _________________ Often imitated but never duplicated |

So what exactly is the issue with the HD Marv? Are you using a catch pan for grey water or letting hit the ground?
Or di they want an actual basin that can be filled to wash your hands in?
or are they just wanting a sealed self contained catch basin for the grey water?
I have been ok'd at my vending events from the HD with the free-flowing units and a bus-pan for catching the water. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

She was just saying that she would "like to see" me using a self contained hand washing station.
Nothing has ever been said that what I am currently useing (the bucket to catch the gray water and the insualted water jug) was NOT legal. Just that they would like to see everyone using the self contained unit.
I KIND OF think, once they get "somebody" to get one, then they can tell everyone else....well "so and so" is using one.  _________________ Often imitated but never duplicated |

So they want full containment for the waste water and it to travel through a pipe to get there?
That would be easy enough to comply with,
An inexpensive fold-down plastic sink with flexible tubing running to an RV-type waste water transport unit.
I would probably incorporate a P-Trap right under the basin to make them happy too.
I bet gravity feed will still be ok?
You could score some huge points with the HD by being the first person to comply. You can set the bar for everyone else to meet.
If I was asked to do this, I don't think it would be too cost prohibitive or difficult to engineer a system to meet their "Wants". You've defenitly got the spare room on your rig to do it. You could mount a gravity fed tank above head level, and a stowable containment system underneath.
Here is a link to something that would meet your needs, it is designed for RV waste systems for the owner to dump waste without moving the RV to the dump station
