Does anyone have any good suggestions for smoking pheasant? I went pheasant hunting for the first time and have some to work with. I would like to try a few different recipes.

I have some as well from a hunt earlier this year that I would like to smoke as well.
It is not a smoked recipe but I had some that were fixed this way:

cut into about 1 inch cubes
soak in Italian dressing for about 2 day
wrap in bacon (so bacon covers 4 of the six sides of the cube)
put on scrues (spelling?)
and grill

to add a little kick, place Jalapeno peppers about every 2 cubes...

they were really good.....

I would avoid smoking a pheasant, they are fairly lean and wouldn't benefit from low & slow.

It could be brined or injected to add moisture but that would detract from the wonderful taste of natural wild pheasant.

Pullit,

the word you are looking for is 'Skewers" for your pheasant kabobs.

I would split the bird and grill it gently for the best results, or roast it with root vegetables and bacon on the skin.

Has the bird been cleaned correctly? did you pluck it or skin it? that will also decide on preperation techniques too.

many people forget to remove the anal gland and that will wreck a meal real fast, and I have seen the crop left in the bird spilling putrified pheasant digest and pebbles into the roasting pan too. And don't forget to split & clean the gizard, that can get nasty too.

I knew scrues did not look right but just drew a blank on the spelling, thanks, and thanks for the tips on the birds as well...

Why not smoke them with a nice layer of bacon overtop.

Anything that tastes good tastes better with bacon. Wink
