...by Rudy's BBQ. They fed ~300 of us in 35-45 minutes.

Their 'chaffing stands' were made from ply wood and painted red. The dishes were steaming so I'm only guessing there were sternos in the bottom of each one.

They showed up in a Ryder rental filled with cambros and coolers. To be honest, the food wasn't bad. It would have been really nice if they would have had a smoker on site but...

They probably had 10 people working 2 lines. Three serving in each line (one doing all three meats, one serving slaw, beans, or potato salad, and one serving a peach cobbler), one on the end of each slicing brisket and sausage, and one...hmm...maybe they only had eight??

They were onsite a total of MAYBE two hours. I paid $8 for my plate. They didn't care if you had a ticket or not. Whoever showed up in line got to eat.

Anyway.

$8 for good food seems like a good deal. I went to a sandwich shop in town and had a grilled chicken wrap, a handful of corn chips, about 2 TSB of salsa, and a med. drink which ran me $9 bills and some change. It would have been an okay starter, but not a main meal for a big'ol boy like myself. I would have much rather paid the same monies for the good bbq.

Did they load it all in at a local restaraunt?

Yes, Rudy's is a local chain. Nothing was prepped onsite. The briskets and sausages were cut on site...the chicken was already chopped.

I'm guessing they had no requirement for a handwash station? They brought 'bullets' of tea. The ice was in large, lined trash can sized barrells. You got your cup, scooped out your own ice, then filled it with tea. Easy concept for both the staff and the customers but kind of gross all the same.

At the end of the line you got your own sliced bread, pickles, onions, pickled jalapenos, and sauce - which was just a large pot with ladle.

From what you descripe, I see several "POSSIBLE" violations there Shocked Shocked Shocked

Wow, thanks for the insight into how "the other guys " do things! Shocked

We of course have the hand wash station (and gloves).

The drink thing (mess) is something else that we highly suggest to our clients- canned drinks and bottled waters. We have a cooler for each flavor which helps on stocking and the guests finding what they want to drink (in a timely fashion).

At a local car lot in town there was a used ambiance. I thought it was 8K on the window, but the 1 had been rubbed out, so 18K was too rich for my blood. I looked it over with my 6 yr old daughter, and she was pretty siked. It still had a gurney thing in the back. The dealer looked at us strange when my daughter and I started saying how it would be funny to wheel the hog around before we cooked it.... The we let him that it would be painted up for a BBQ catering mobile. I liked the idea of the Ghost Busters type thing... I guess I like to stand out in the crowd. My normal ride is a jacked up bright yellow jeep with 33" mudd'n tires.

We do the same thing and only offer one brand of regular & diet soda and bottled water (unless specifically ask for something different)...make it simple and quick as possible

I always thought a "Hearse" would make a cool "BBQ Puller".

One question though: why would an established business show up in a rented Ryder truck to feed a catered event?

I don't own a popular CHAIN of restaraunts, and can do better than that!

Overhead, overhead, overhead. If they have 24 locations to cater from that may mean they need 24 trucks if each location has an event. And if they don’t have an event that’s 24 trucks rusting in the parking lot while making payments and taxes etc…

Seems that they rent the trucks as needed. May not be good advertizing but sound business thinking and cost savings.

Most all of the popular chain restaraunts here have mobile smokers, in some cases multiple units.

They also won't do an on-site for less than 75 guests (we do, it's a niche' aspect for us).

I just can't see feeding a group that large out of the back of a truck- rented or otherwise!

Not sure. I thought it was strange. Maybe all of their mobile units were actively engaged elsewhere???

It could have been that the dedicated truck was down for maintenance or something like that. I know the bigger bbq joints around here have their vans w/ their own logos, but things to happen at the last min. I know that is a major concern when we have a booking...what if my transmission fails the day prior, or morning of...how do we handle that???

Well Kevin, I could certainly understand a vehicle breakdown. If that happened to me, yes I would rent a truck to get the job done.

However, it would still be towing a cooker behind it! Wink

Now how do we explain the plywood painted chaffing stands? The party for 1,000 needed the stainless ones worse than the party for 300? Laughing

The iced tea deal sounds nasty as well, but that's just me!

I searched high and low for our camera and couldn't find it. Someone must have had it. I, too, was very surprised at the plywood chaffing stands. They didn't look bad painted red...especially to someone who wouldn't know what they were looking for but...I still thought it was kind of funny. Rudy's BBQ - highlighted on the Travel Channel's BBQ Tour - using plywood chaffing stands. There has to be some irony in there somewhere.

The iced tea gig was kind of raunchy. I drank mine warm then found the cold sodas.

Don't get me wrong - I'm not throwing mud on Rudy's. I eat there often and thoroughly enjoyed my lunch yesterday. I'm just telling thesmokering catering crowd how a med-sized BBQ chain catered our gig!
