I smoked my first turkey today. (Well I smoked 2) I brined it last night with Salt, water, apple concentrate, apples, tangerines, and 3 tbs of the rub I was going to use. It was in the brine for 12 hrs, took it out washed it off, patted dry and added the rub. It smoked at 325 for about 4.5hrs. It was so good it would make a preacher kick out stained glass windows. WOOOOOOOOOOO I love trying new things on my smoker. I just need a bigger smoker.  |

Congrats.
But smoking 2 turkeys sounds like your smoker is big enough at least for me.
