maple sausage AND jalapeno? Is it too weird? or do the flavors work?
I have to do an employee Christmas holiday Breakfast, and I want to do some sort of breakfast fattie, most of my cooks are Mexican, so the fire would work.
Sweet and spicy, mmm, worth a try, right? |

A fattie is a roll of breakfast sausage (like Jimmy Dean) that is smoked whole. It is usually covered with a coat rub and sometimes stuffed with a large verity of ingredients. _________________ Sa-Mokin Competition Barbeque

| I was just able to buy Jimmie Dean Maple sausage. It's not available anywhere I shop, but I was was cooking for a party a few hours north, and hit pay dirt. The sweetness of the maple offset the rub I put on, so I'd say some chopped japs would be awesome in maple sausage. Maybe 3-4 in each? |

| Thats all I use when I smoke a phatty Jimmy Dean Maple get that hint of maple WOW its good and with a Jap. I think that'll rock with some pepper jack cheese....mmmmmmm good |

Yes I have and I love it..... The sweetness of the maple sausage really complements the spicyness of the jalapeno.
I usually take some of my leftover cream cheese mixture from making ABT's and stuff the jalapeno with it and some sharp cheddar cheese and stuff the sausage with them whole like that. I don't mince or chop up the jalapenos.

I`m not too excited about the jimmy dean maple stuff but here are some other "fattie breakfast" ideas for ya......

Now if you want to try something a little bit different.
Take your fattie and crumble it up, and and bread cruimbs and some minced onions and shredded cheese, salt, and more of your favorite rub. Mix together, with a little bit of soft butter. Then stuff that into a portabelo mushroom coated with olive oil, then top with more shredard cheese.
Smoke at 300 or so, for about an hour or till the shrooms are donne.

I made two last night using Jimmy Dean Sage sausage stuffed with Anaheim chili's and cream cheese for my office lunch today.... They turned out really nice.
My girlfriend had never tried it before so I gave her a sample last night and I think I've created her first BBQ addiction... LOL
I'll be posting some p*rn for everyones viewing pleasure sometime this evening..... Of the food... not of me and the girlfriend... LOL _________________ I only believe in two basic food groups... Chili & BBQ

Yep,
Use the smaller portabellos, they willcook quicker and won't dry out the stuffing. Pluss you get to eat them quicker.

Here's the pics of the groundhogs I did for my office party. These are Jimmy Dean Sage sausage stuffed with Anaheim's and my ABT cream cheese mixture.... Cream cheese, cheddar cheese, minced onion, onion powder, garlic powder, smoked paprika, bbq sauce, cumin.
I also dusted them with some Bad Byron's Butt Rub and finished them with just a light glaze of KC Masterpiece.
