I'm either doing 2 butts or a brisket. If I'm lucky I'll be doing all three, but it will be hard convincing the SO that I can do so since I reined in her spending budget for the weekend! We'll see what kind of crafty reason I can give for the justification! I bought some B&B Experts Choice Lump Charcoal at a local shop down here, so I'm going to see how well a cooking session works with that stuff. It will be nice to not have the large Kingsford ash buildup and weird black flaky buildup in the cooker! Someday I PROMISE I WILL TRY the other briquettes that don't have all the gunk in them, but for now I want to go back to good old trusty never-fail realiable 100% guaranteed and verifiable LUMP!
I'll post pictures as long as it doesn't rain too much this weekend! _________________ --Chris Baker

I plan on smoking some chicken this weekend...nothing major..I am going to let the pros handle the smoking this weekend as I plan on attending the pig jig... |

I gotta cook for the Lion's club street carnaval Saturday nite. They wanted 4 butts, 200 burgers, 200 dogs, and 150 brats. Just went to an Italian Deli and picked up some seet sausage...will have to add them in to the brisket, ribs, and chicken I was already going to do. _________________ Dinger |

I saw some awesome posts and pics of what people were cookin' this weekend. I had to work all weekend and barely had time to grab a sammich, let alone fire up the smoker I hate when work gets in the way of a great weekend, but we should be able to eat now for another week. I will try to redeem myself next weekend, which just happens to be OU/Texas weekend.

No doubt sledgehammer03. I've got a nice butt ,some ABTs and some tater salad on the drawing board. Can't do them til sunday. Been looking at (sic)BBQ's brisket pics all day. It's killing me. _________________ Love the voodoo that Q do.

It seems to taste better right off the grill. But I have luck with thighs just vacuum sealing them. Or take the other meat, cut it up and vacuum seal it. The trick is to take it out, tear it up (not necessary for thighs), bag it, then get it cool in the fridge. This gells the fat so it's easier to seal. Now vacuum seal it and put in the freezer. Always date the meat.

Even at regular price it is had to beat $0.99/lb. But soon they will be available for $5.00. Not sure it will be the same, tending the fire when winter arrives  |

I should have no problems until mid December as the temps will likely still be around 50 or so. Of course January and February are gonna suck! _________________ Dinger |

I live 2 hours south of the Candian border. Gets pretty cold up here (35 right now) and I BBQ ALL winter. I smoke at any temp. Why would it matter if you are really a BBQ Crazo!!!!!!!!!!?
