I have 2 briskets on and 2 pork butts. We are having a feast today with the family, we will have pulled pork with either a north or south carolina sauce and we have a texas style too. Anyway back to the food, buttermilk coleslaw,5 bean salad and Roxy’s Kicked Up Corn Bread. Oh ya some sliced tomatoes and pecan pie for dessert

I know it doesnt really count as BBQ but up here in Canada most people dont know what real BBQ is.

This is what I cooked for the guys at the mission for Friday nights supper. We had received a donation of 30 lbs of riblets so I prepared my good old stand by rub, coated the riblets down and set them in the walkin for 3 hours so the rub could get all freidnly with the riblets. I grilled the riblets till they had some nice grill marks on em and then I slathered them up with a BBQ sauce I had made up in the morning. I placed all the coated riblets into a large pan and covered with foil and baked for 1.5 hours at 250 degrees till they were nice and tender.
I prepared about 25 lbs of German potato salad, using up the left over cooked bacon and sausages from the previous night, as well I make 2 gallons of cole slaw. I shucked 70 cobs of corn and prepared a tomato and cucumber platter and fresh buns to go along with all of this.
As it is harvest time up here most of the produce I used was donated to the mission. The only things the SA had to buy for this dinner was the potatoes, bacon and sausage, everything else was given to us either by local farmers or from restaurants.
If you can imagine, we serve 65000 meals a year out of the kitchen I work in, on a budget of $28,000, thats 43 cents a meal. We could not exist or do what we do without donations.
To those of you that have take the time to make a donation to the SA let me say thank you, you just have no idea the good you folks do when you give, from someone who works behind the scenes, you do make a difference.

This weekend will be a pork Picnic and my first attempt at ABT's..shoudl be an interesting weekend...Dawgs kickoff at 9:00 leaving plenty of time to get everything done...

Haven't decided if I'm going to cook this weekend or next. I just got some B&B Experts Choice Lump Charcoal, so I can't wait to use it! Still got enough leftovers in the freezer for another 2 weeks though! All those "experiments" this summer stocked my freezer pretty good! Laughing

Unfortunately taking the weekend off. Will be ferrying the wife and kids to Occoquan Days (30,000 attendee craft show where i am sure purchasing them everything under the sun) on Saturday. Thankfully Sunday will be my day, and we will spend it at RFK Stadium watching the Washington Nationals.

Guess that just means bbq on both Saturday and sunday the week after!

Starting to fill the freezer for the winter. Planning on 8 racks of ribs and 15 lbs of chicken thighs. While the meat is on I am planning and working on the new cooker, hope to install the fire box and make the stand.

Newmeat......so you will be freezing your chicken? Do you lose alot of flavor when you let it defrost? I have never had much luck freezing chicken so would love any tips you might have.

Went to Sam's tonight......they had brisket and boston butts on sale for $1.32 a pound as compared to their normal $2.50+/pound. So...got a couple of briskets, 3 racks of loin back ribs, 2 butts, and a couple of chickens. SO...think I will have to do the 3 racks of ribs and 2 chickens........man the chicken is good over salad for work lunches!

Oh that is a good idea...I smoked some chicken last weekend and the little lady really enjoyed it...I bet that she would really enjoy me smoking some chicken and shredding it up to use as a salad topping...I might have to do some more smoking this weekend...that chicken was good...

I have a friend in Ohio as he has to pay those crazy prices for brisket. I can get it here for 1.28 everyday and there is a store now that has it for .99

I wish......in our local grocery store brisket was actually "on sale" for $2.99 this week.........Sam's is a lifesaver.

My wife pretty much requests some chicken every weekend for either chicken salad or as a salad topping. Frankly having lost 80 pounds (and still needing another 20 or 30 more) having something tasty on top of my lettuce works wonders for making me enjoy the salad.
