Hello,
I just obtained 20 lbs of Candian Peamael bacon and was curious if any Canadian BBQ experts have smoked any?
Would I be wasting my time and effort due to the corn meal cure?

Panmeal bacon as far as i know is canadian bacon that has been cured the same but left unsmoked and coated in cornmeal in order to obtain a specific flavor. Due to the cormeal and time between orginal curing you could end up with unexpected results. You may even have trouble getting any smoke flavor at all. You would have to clean it off and try to create a pellicle before the smoke would stick.
Best result you wind up turning your panmeal bacon into normal canadian bacon but with twice the effort. Both of these items you could easily make yourself and with better, fresher taste. _________________ Jenson

That may be true that you could make better yourself, but most folks would make less than a packaged grade of back bacon without a lot of practice.
What I know as Canadian bacon is a cured smoked pork loin that is almost like side bacon in the way that it fries. Where as peameal is different as it is brine cured and not smoked.
Obviously, the corn meal does not smoke well and that is why you need to remove it before smoking. What you are in essance making is Canadian Bacon, well almost as real Canadian bacon is cold smoked. What you end up it is better than just normal store bought Canadian bacon.
Hey, you could always eat the bacon sliced into a corn tortilla, that way you are mixing back in the corn flavour to the bacon.  _________________ Chargriller Akorn
