| Your prime rib has inspired me. Pictures look great. Cooking up 30 lbs of it this Thursday for a post harvest party back on the family farm. If everything goes well they should finish up harvest Wednesday and we smoke on Thursday. Once again your prime rib looks great. |

Just cant tell ya how much better that dry aged meat was over wet aged... The fat was so sweet, not that I normally eat a lot of fat from prime rib or rib steaks but it was almost better than the meat. _________________ Chargriller Akorn

| So you were looking at a rough cook time of 4 hours? How much would a rack like that cost on average? |

I was wondering about the cost too. here in newengland i can get a full roast boneless for $5.89/pound all year.
Near the holidays the supermarkets with bone get to about $5.99
Your roast look so good, i want to make one now. there goes another 90 bucks or so.
Thanks for the pics. _________________ LANG 48 PATIO

| thinking of doing one for my birthday next week. Going to try and get it this weekend to dry age it for a week before cooking it. Alton Brown's Roast show aired last night and along with this thread certainly got me pumped for cooking one. |

I think it went very well. The outside meat had a very good flavour IMO. The wife and kid really enjoyed it as well so for me that was a success. _________________ Chargriller Akorn

Indeed, there is something special about the look of a propperly done prime rib. Great job. I'll bet the lightest kiss of smoke was ridiculous good. Even roasted I'm the guy asking for the end piece so I can taste the seasonings.

Prime rib is always pricey in these parts... heck, dry aged would be VERY painful as they would likely charge something just shy of your first born due to weight loss.
All that said... it looks like one hell of a meal. I did a 4 bone one a couple months ago on my WSM and it too turned out AMAZING. You just need to have the right audience. My meal was with the wife, ma in-law and grandma.... should have just done a pot roast with their tastes. The fat and flavour it imparts is TOTALLY lost on most people. |

Roxy
WWWWWWWWWWOOOOOOOOOOOOOOOOOOOWWWWWWWW
on the prime rib, and your wife's abt not too far behind.
Had to be some great eating. I think allot of guys here
know about taking beef a bit further on the dial so there are no meltdowns at the table.
Great job
