What you'll need:

1 Roll of Breakfast Sausage

10- 15 Jalapenos

Cheddar or Cream Cheese (Whichever you like)

Little Smokeys

Real Bacon Bits

First cut the Jalapenos in Half - Long Ways, and scrape out all of the seeds. Fill the cavity with the Cheddar or Cream Cheese. Sprinkle on some of the Bacon Bits. Put in a Little Smokey. Wrap them in the Breakfast Sausage and Shape them like an Egg. Smoke 'em until they look done and the internal temp is around 160*.

rub n smoke,

i love these eggs we do them often at the firehouse.the only thing we do different is we roll them in some pork shake and bake before going in the smoker or oven.

I use yellow food dye in the cream cheese so it looks like a real yoke.

I made kind of a variation of these today..... what i did was take two pounds of ground pork sausage, one egg, little less than half a sleave of crushed saltine crackers add a little milk mix well till kind of gooey like meat loaf set a side, core some Jalapenos slice into one inch rings, stuff a small-ish cube of colby jack into the jap. ring and wrap with the pork sausage loaf stuff, roll in dry rub smoke to 160-165 or so and brush with Q sauce last few minutes of cook time. Look kind of like meat balls but turned out pretty good. Watched the Huskers loose another game today Crying or Very sad made some wings to go with it.
At least the game day food was good ...... have a look see.

i love these bad boys.. i sometimes take a pack of brats and decase them if ya will. then mix the ground brat meat with a bit of ground round and use that for the meat portion... works pretty well... i have never used breakfast sausage i will have to try that

I made a similar item last night. I stuffed jalapeņo halves with a mixture of cream cheese, shredded colby-jack, garlic, and chives, then wrapped each half in sausage, sprinkled on some hot mexican paprika, then wrapped them in peppered bacon. Smoked them for approximately 1.5 hours at 250 degrees.

I'll definitely be making these again!!!

I have always had the Armadillo eggs made with jalepenos stuffed with cream cheese and wrapped in bacon.

These with the sausage look awesome!

I'll try them as soon as my jalapenos are ready to pick

i believe the ones you are talking about wrapped in bacon are called atomic bufalo turds lol armadillo eggs are with sausage, turds are with bacon
