Did just a small cook for friends and family yesterday.
Slathered the flat I picked up at Sam's Club with some Griffin's Yellow Mustard and then dusted it with some Weber Chicago Steak seasoning.
My mom showed up with this 5lb Bar-S Bologna.... So what the heck... I crowned it and added some Weber Chicago Steak Seasoning to it too.
Don't ask me where I found this 20 legged chicken but after a 3 hour bath in a brine of 1 gallon water, 1 cup kosker salt, 1 cup Splenda, 1 tbls crushed rosemary, 1 tbls 5 spice, and then a dusting with my secret rub that is so secret even I don't know the recipe anymore... This is what they looked like.
And how can you have a BBQ without ABT's??? I know I can't. The jalapenos came straight from my mom's garden.
After an hour of slicing, dicing, sweating, cussing.... They are ready to go on the smoker in a few hours.
I estimated the flat should take about 8 hours to cook. Here's what it looked like at the 4 hour mark. I had a few shadows working against me when I took this pic.
3 hours before chow time and on go the legs, ABT's, Bologna, & Stuffed Groundhog. You can't see the legs here but they are hidden under the ABT's.
1 1/2 hours to go and the bologna and groundhog are looking good.
And here's what the legs looked like after they came out of hiding.
And this is a rarity at one of my BBQ's but we had a few leftovers this time.... Here's the aftermath.
And here's the reason why there were leftovers.... Everyone was saving space for some homemade banana ice cream!!!

And away we go!!!
The ice cream was really good and a great way to end the day. Afterwards we all sat around and shocked my mom with tales from my sisters and my childhood.... It's always fun when mom finds out her little angels weren't quite as angelic as she always thought they were...  _________________ I only believe in two basic food groups... Chili & BBQ

That was one nice spread you put out. Everything looked good. What was it you stuffed that fattie with? _________________ Love the voodoo that Q do.

Good lookin' grub! Homemade Icecream! Nice touch. I can't think of a finer dessert to follow all that smoked meat.  |

That was a Jimmy Dean Maple Sausage stuffed with jalapenos and the cream cheese mixture for the ABT's.
The sweetness of the maple sausage goes great with the jalapeno. _________________ I only believe in two basic food groups... Chili & BBQ
