Just got done 2 - 15# prime rib roasts for a customer. Cooked over oak fire at 250-260F for 5 hrs. They were about 135F in the center when removed. Also di 95# of inside round roasts and still have 4 - 8# butts on. Busy day but soon get to kick back and relax.

OMG, that looks great. I love those things, they are SOOOOO juicy, a little horseradish and I'm in heaven!

I've only done one prime rib and over cooked it so it was only great, not fabulous. It is expensive meat to not be fabulous.

That one in the picture was $91 cdn, oh, that is the same in USD now. My butcher gave me a good price of just under $6/lb.

thats not bad, I paid like $15/lb, because I live in the land of health food freaks and everything is too expensive.

Plus, not being a professional, I have to pay "retail" rates.

around christmas time, the Costco in our area will have USDA Prime rib roasts for $10/lb, $12/lb boneless, prices you cannot beat for retail! I asked if they do custom orders, they said yes for a full case, but that runs $800 or more since i think they said a case is 60 to 90 pounds, i cannot remember.

MMMM good. Looks great and nice price from the butcher.

Every once in a blue moon I can catch them on sale for 4.99lb but most of the time they are $9 lb.

My local butcher shop has PR for $6.99/lb. I guess somethings are cheaper around here.. go figure! Nice deal on the PR!
