I'm pondering over the best approach for doing a fund raiser for my Sheriff's Office Anual Appreciation Dinner. I'm thinking about selling tickets for either whole buts or whole chicken and the idea is that you inform the people where and when they can pick-up their meat. My cooker will hold 40 whole chickens. It's propane with a smoke box that does pretty good. I'm sure that I can get a GREAT price from the local grocery considering the cause.
Price? Pick-up time? Lunch or dinner time? or both and do two cooks in one day? is chicken or pork the right meat?

What meat goes better in you area of the country??? Some areas pork is king...others beef and so on.
Can get a better price (although longer cook times) with pork butts or briskets due to them being considered more of a 'speciality' items.
Set up a pick up area.. church or someplace that has a large fridge where you can take them for later pick up. Just be sure to have someone there to distribute them properly...might come back to see ALL gone.
Price...I would think $10 per pound cooked weight (need scale on hand too)...or $30-$40 each..then no scale needed.
I routinely sell briskets for $9.99 lb. that equates to $50-$75 each. |

Pork.....and great suggestion in reference to having a location with a fridge. I was first invisioning everybody showing up on time and not needing a fridge.....silly me........  |

Collect the money in advance, and give them THE time to pick up their food. Trust me, they will get there on time!
Seeing as you are already doing this as a fundraiser (and I assume you are donating your time) there is nothing worse than sitting around for a few extra hours waiting for them to get there a$$es down to pick up the food.
I have a number of neighbors that love smoked turkey for Thanksgiving. They pick up their birds at 12:00 noon (so as not to interupt my own families dinner) or they don't get em'!  _________________ BBQMAN

Thanks BBQMAN......yea, not worried about the time...I work for the Sheriff's Office. I'm very fortunate because the Sheriff just bought the office a nice pull behind. This is a perfect time for me to practice for when I relocate and start trying it for profit.
I am getting such a kick learning about this passion for the Q and all of y'alls successes  |

Offer a choice of meats. After all, some people just won't eat pork even if it's not for religious reasons.
Also, you don't want to be sending a subliminal message about the sheriff's department by serving only pork. Just kidding!  |
