planning on smoking chicken thighs, bone-in, skin on
but what i need to know is cooking time and temp?
thinking about cooking around 30 pieces. |

I cannot remember the time (not really kept up with it) but I always cook to about Internal 160 or 170 and that is usually at 225 or so.
I tried to do the time aspect of it in the past but each cook was always different so I decided to just cook to an internal temp as well as my own personal taste test  _________________ Jeff Vreeland

the only reason i was asking about times are cause i am cooking about 6 pork shoulders on the otherside of the smoker and i know roughly how long those should take, so now i am just trying to get a general idea on when to put the chicken in there, and that way its all done around the same time. labor day party and the first big display of my smoker.

| I cook bone in, skin on thighs regularly. I usually cook thighs between 235-250 and my general rule of thumb is two hours. Sometimes more, sometimes less but usually in the ball park. Cook to 170 internal. Your time will vary. |

Hi,
If you stay at 225 (I cook chicken at 300-350 for less time), I'd allow 2 hours, but start checking around 1.5 hours; some may be done quicker than others. It's hard to give exact times for numerous reasons, so you'll have to pull based on temperature. If the butts and thighs are done within an hour of each other, you shouldn't have any problems keeping everything fresh and hot in a cooler or in your oven, set to 175-200. |
