Like you're WSM doesn't take out a lot of the learning curve either? Rolling Eyes WSMs may not have a plug, but fire-tending is not an issue with them once you get it going. Sounds like it's cheating traditional old fire-management to me. Wink

I'm sitting here wondering why I'm defending pellet cookers and realize it's because I'm just defending anyone who enjoys queing. Why are you taking a jab at them? I don't own one, so don't call me envious. I'm surprised no ceramic cooking guys have weighed in. Once they get their pit to temp, it's set and forget (them lazy ba*ds) and their technology is hundreds of years old. I dare you to say they are cheating.

Hell, I might as well chime back in. I Q'd on a stickburner for many years, took some time to get it dialed in to make Q to suit my tastes. After that, I could reproduce the flavor, bark, smoke ring, tenderness probably 85% of the time I Q'd. Sometimes I just plain screwed up or got some meat that wasn't up to par.
THEN, I decided that I needed a little more sleep, beauty or otherwise and got a Traeger. Let me tell you, if you think there isn't a learning curve on them, you're sadly misinformed. It took several sessions to get back to where I was with the stickburner. But, at least I was more sociable to everyone around rather than snapping their heads off because I was so tired.
Like I have always said, it's the cook, not the cooker that makes for a successful smoke.

Now see there bluesman, you did go over the line on the pitmaster thing.

This thread actually had the potential to be informative, but just went clear off the tracks.

Now I'm not a big fan of pellet cookers, but I don't put folks down that use them. Some of the guys here that do have done quite well with them (be it personal or proffesional use), and I respect that.

I could use many analogies for this but I will equate this to driving a car. It used to be everybody could drive a stick cause that's all there was. Then as automatics popped up on the scene the oldschool guys would scoff at anybody that drove one. Now, and I don't have the figures, there are probably more people driving automatics than sticks. I remember talking to my niece when she first was learning to drive. "You should learn to drive a stick", I said. She looked at me as if I told her she should head to the livery and mount up. "Why would I want to do that. This is easier."

Now before I get smashed, all I'm saying is that with technology making all things easier to do some people are going to find that they would rather not bother with the old way. There will be others that will stick with tradition. And still others that appreciate and learn both.

I don't have a problem either way. Although I have to say I'm a fan of learning about what got you to this point.

Well, Roxy, I was in on the first one that got dumped. Figgered that someone was trying to tell us something with the dumping. Probably much ado about nothing.
Oh well, finally got back to the computer and had my say.
Basically, give me any pit and I'll be able to use it to turn out decent Q. It'd just take a couple times to turn out really good Q.
It's the cook, not the cooker. It's just that I like easier stuff now with all the other crap in my life at the moment. With all the OT I"m putting in now, not to mention having to get up at 6am every day to take my wife to work and then pick her up at 10:30 to take her to PT for her arm & shoulder. If I used anything else that I had to attend to all the time like a stickburner, I just wouldn't have the time or energy to BBQ anymore.

Were these done on a Traeger or a stickburner??

I dare anyone to say they weren't really good ribs. Quite a bit better than the ones I'd done on my stickburner.

As mentioned,since most pelletmunchers progressed through kettles,WSM s,stickburners,and some ancient eggs[ as well as in ground pits and smokehouses]-I figure it is about time that bluesman offer to swap cookers with some of them and show us how the" set it and walk away pellet cooker "is that easy and takes no pitmaster skills.

Sorry bluesman...but your statement is not a fact, and it's not hypocrisy. KCBS does not allow gas or electric smokers in contests because of the USDA definition of barbecue, which is "meat slow cooked over wood or coals from wood". Pellet cookers fall under that definition completely. That's it...plain and simple. Hopefully, a little background info will help you form an educated opinion. Wink
