I have to agree, it must be based on where you live. But my problem is the definition. To me, it's a service charge, call it what it is even if the people gripe. I've been in the service business a long time and charge a fee and get a tip when one feels obliged to give one. If I feel my work deserves more, I won't slap someone with a mandatory gratuity, I'll just charge more. Why? I guess all cateres who charge a mandatory gratuity are unprofessional

I dont think that the auto-grat is unprofessional...I think keepig the auto-grat and not giving it to the people it was intended for is not only unprofessional, but also unethical. |

Sorry you took my comment the wrong way . I'm not calling you unprofessional, I'm just saying since you are a professional, charge what you're worth up front. Just a suggestion, but do it ya'lls way. GEEZ, I had even put a smiley to be nice about it. I don't mind disagreeing, it's healthy for everyone. Heck, next week I'll have been married for 17 years. Try disagreeing for that long.
Marv, I've never cooked tri-tip so hearing how long it takes to cook it makes sense. I bet you guys were still in a scramble though, especially having to change the setup into the barn.
BTW, I never addressed this earlier, but I highly commend you on not kicking the teeth in of some guy who threw a plate at your wife. I would've been sued and out of a business, a home, a car, you name it for the damage I would've done to him. I respect your tolerance. _________________ "Tag line? Acutally, I did not even KNOW about the plate throwing until we were on our way home and we were all talking about the day's event.
I kind of think my wife KNEW better than to tell me WHEN it happened...I admit, I do have a pretty short fuse at times...but TRYING to do better.  |

My wife has been bounced from a bar for going across the table and wailing on some guy because he said the wrong thing. This plate throwing guy wouldn't have stood a chance. _________________ Mike

Mine scares me too. One of these days I will wake up to the sound and feel of gunshots, and see her standing over me asking "How Do I reload this thing?"
She works with a guy that is at least 325 pounds, and over 6 foot tall, she told him that she would snap him like a twig!
She tells that to me too, and I got a few inches in height on her, and a good 85 pounds too. She would try, she might not succed but she sure would try!
I bet Bobbie would have walked around the table and decked the guy right on front of everyone, then quietly asked who's next! _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

Out of all this can be derived from your last line. Restaurants, and caterers, have a "front" of the house that deals with the public, and a "back of the house" that cooks the food and stays away from the public.
I think it's pretty clear now, who should do which job in your operation.... |

That would be all well and good IF my wife had anything to do with my business. This is MY business, I make the decisions, I do the cooking, I deal with the customer. My wife RARELY helps me and when she does, it is as SERVICE STAFF ONLY....Although she does like to help me SPEND my money...  |

Sounds like after the plate throwing incident, you may have a tough time getting her to do service again!!
Seriously, tho, when the dad called, the next call should have been to the bride and groom to confirm his modified head count. It sounds like it was all his brilliant idea to chintz a little on the cost of the "special day" (the wife knew abt it, too, but was too intimidated by him to say anything).
But, ultimately, he got what he paid for, cuz sooner or later it'll come out that his little scam was the reason there wasn't enough food, and it was his fault that little (big?) lady's day was ruint....
