Hi Everybody:
Does anyone have a recipe for beef jerkey. Ive made it in a food dehydrator but never on my smoker. I usually use eyeround but was wondering if there is a better cut to use and what the smoking time would be. Any advice would be greatly appreciated.

I use all kinds of "pre made" jerky cures. Hi mountains turns out the best so far. Done a little homemade but havent perfected the recipe yet. As far as smoking- after meat is "cured" i smoke it at 160-175 degrees. Time will vary on thickness but roughly 4 hours. You want a firm but slightly bendable piece out of the smoker. Then put in fridge uncovered to cool. It will be drier then you think most of the time. I dont like stuff you have to chew on for an hour!
