I smoked some beef ribs this past weekend for the first time using the 4/2/2 method at 210-215F and they came out simply heavenly. The meat would almost slide right off the bone. I cooked them over hickory and after brining them overnight I seasoned with cracked black pepper, garlic powder, season salt and onion powder. These will not doubt become a staple item in my BBQ routine. One thing I notice vs the above is that the meat was pretty much all on top of the ribs and not between them.

Hi Saint, I've found them at Brookshires or Super 1 Foods just ask the butcher if they don't have them on the counter Smile The Cajun
