It is the other half of a full shoulder the butt being the top half the picnic being the bottom half. I feel they aren't as heavily marbled as butts so they don't hang quite so long on the 160 -165F plateaux, but rub them and throw them on the smoker they cook up just as well. _________________ Here's a change Robert.

Yes by all means try one. They do have a little more hammy flavor than a butt though but are excellent BBQ.
I take the skin off mine(some do, some dont) + smoke it the same as a butt.

You might look at the label and see if they are inhanced w/ solution. Albertson's here has them on sale, they are the John Morrell brand and are enhanced w/ 12% solution. The enhanced ones will cook up okay, but will definitely be much more "hammy" than regular pork.  _________________ Mike

Thanks for the info. They had two types there, one was wrapped and was the type with the solution in it. The other was fresh and was just wrapped and labeled, definitely didn't look like anything with a solution in it.
I'll pull at 195 or so and figure it will take about 8 hours or so based on what I saw in another post about a 4 lb butt. |
