My first Christmas in 42 years without my beautiful girl. I'm doing what she would want me to do and inspired me to do.....Cook!! My son and I will go to the cemetery and do a shot of good bourbon with our girl, will go have a visit with some family, then I will come home and go solo.

Prime Rib was our Christmas tradition and considering it's 45 degrees warmer than our average Christmas I have prepared the Primo for a 5.5lb 2 bone Angus Reserve roast. Well marbled from the small end. Going to run 275, reverse sear at 600+ degrees.

Served with garlic mashed piotatoes, sauteed asparagus tips, mushrooms that will cook in the aus jus until serving time.

Served with the best grated horseradish available to mankind and aus jus. A top shelf Cabernet for hangover purposes!!

Dan it has been such an amazing run. We have used this season to celebrate our girl and her love for football and tailgating. As 20+ year season ticket holders it was tough to not have her by my side but my kids have been here for every game this year. These last two playoff weeks have been amazing. Been sniffing around Super Bowl tickets....me and my gitl did an amazing Super Bowl trip in 05 (New England/Philly). Loved being there, going to the parties and absorbing the sights and sounds as a nuetral observer. Sat on Row 2 of End Zone, stayed on a cruise ship in a suite (Jacksonville added floating hotel rooms) went to the NFL player of the year Gala at TPC Sawgrass, a couple of other parties, airfare. Paid $5200 for the trip at an NFL auction. Ughhhh something similar today, $25k. Thinking a nice small Super bowl party is the way to go!!
