Hello All,

Does it ever happen to anyone else that when you are the one smoking your meat, you can't taste the smoke? I thought I read about this somewhere else at some point, but I can't find it now. My understanding was that it happens because it's kind of like smelling something that stinks for a while; at first it stinks but then you adjust and don't notice it. However, if someone else who hasn't been smelling it walks in the room it hits them like a ton of bricks. Similarly, when you are running the 'Q, you are in the midst of the smoke, hence you adapt to it and can't taste it when you go to eat.

That's my theory anyways. I have to ask other people if I have over-smoked or if they can even taste the smoke. Is it just me?

No and your explanation is correct.
If you have time between taking the meat off the pit and serving, go take a shower and change your clothes, it'll help.

i know "if" I taste it, I blew it.

Agree on the shower, once I get the big meats resting at home, i totally go scrub and put on new shirts.

Thanks guys. First of all, I'm glad it's not just me. I really thought I had heard about that phenomenon before, but I couldn't find it again. Great tip on showering, I never even considered that. Seems to obvious...Thanks again guys!

Is your smoke white and cloudy or very thin and blueish..

My BBQ does not over whelm with the aroma of smoke.

Maybe, less wood and make sure it's burning clean.

I never even want to eat anything when it comes off. Big cuts like butts and brisket are always getting foiled and going in a cooler for 4-6 hours. I not only want a shower and clean clothes.......I want hours in between the cooking and eating. Ribs,chicken, sausage....a different story....but I didn't spend hours on end feeding a smoker!

I agree with all the above but what makes it great is on a cool morning after a cook the neighbor stops by to say how good whatever you are smok'n smells... Razz

We've been doing BBQ for 5 straight years and to be honest we don't even eat our own product anymore. People rave about the flavor and taste but we've inhaled so much wood smoke that's all we can taste. We're going to Texas this winter and I hope we will be able to enjoy the food.
