We had our first bbq contest and rented a 250 gal smoker to cook overflow meats.
The owner/builder did not put air vents or exhaust dampener.
He said to cook with the door open and regulate temp by adding wood.
Anyone use a cooker
Like that? It was crazy awkward ... _________________ why see a shrink, bbq therapy...be one with the pig....cj |

That's how it is supposed to be done according to Aaron Franklin.
Gives you "good smoke", rather than "bad smoke".
