Looking for a tried and true Carolina Vinegar sauce that's not going to burn the kid's faces off.

Anyone have one?

Looking for one without mustard.

This one is complements of GrillDog;

1 quart cider vinegar
2 to 4 tablespoons salt (depending on your preference)
1 tablespoon cayenne pepper
1 tablespoon garlic powder
1 tablespoon milled black pepper
1 1/2 tablespoons red pepper flakes
1/2-3/4 cup light brown sugar, depending on taste
1 tablespoon hot pepper sauce

If you need to tame it down leave out the cayenne and up the sugar. This is my go to pork finishing sauce. You might want to make a partial batch and tweak it to your liking. Oh yeah, let it sit for a day or two to meld out before using it.

This may sound stupid but I never made a sauce before but I would like to give this one a go. Do I put all ingredients into a pot and bring to a boil or simmer if so how do I tell when it is ready.
