Hello everyone, I attended my first ever competition at a local car dealership that holds a small comp every year about a month ago. I have always wanted to get into comps, and since this was my first one ever, I decided to do only one of the three categories and do what I do best, ribs. I ended up blowing away the competition, and taking first place out of almost 20 teams, a whole ten points ahead of second place. I am extremely proud of myself and the work I put in to win this, and I am excited to further my competition experience. My one area that all the judges agreed that I needed work in was my texture/tenderness. I have tried many different things over the years, and I just can't seem to get this aspect down perfectly. I even use the Texas crutch. Please help! There are a few more local comps coming up early this fall, and there's some cash prizes out there, so I want to put out the best meat I can! thanks in advance for any help
