Hey guys! I've just started making sausage and I think I'm hooked! So far I've made Italian, Chorizo, Andouille and Jalopeno/Cheddar. Things are going well. My question is in the mixing. So far I've been doing it by hand and I don't think it is thorough enough. Could I use the Dough hook in the KithcenAid Mixer or is it time to drop some $$ on a meat mixer?

Good to see you posting Sgt. Anything over 5 lb. can be a pain by hand & my wifes kitchen aid doesn't do the trick.
I picked up a stainless hand crank 20 lb. mixer by Weston for about 100.00. Works for me... |

I didn't like the meat mixer for their cost and there were lots of reviews that said cleanup was difficult. I use a paint mixer in a 1/2" drill.
I have modified it and can mix 20# in a 5 gallon bucket. The drill mixer and bucket and the entire story is here. My drill was so powerful it was spinning the bucket with the meat in it.

Ok, so I'm late to the party; the traffic here is slow enough that I don't feel bad, though.
That mixer looks pretty good, but if you're up for suggestions, it seems like it'd be a great idea to fill in all of those valleys in there with a bead then grind them smooth, just so you can avoid anything getting stuck in where where you can't easily clean it out before it ferments.
From my beer making experience, the easier something is to clean and sanitize, the more likely you are to do a great job at it to keep things healthy.
Also coming from beer: Lowes and Home Depot have food grade 5 gallon buckets for really cheap. I think I got my last bucket and lid for StarSan for about $6.oo.
Not quite large enough for fermenting, but plenty large enough for a LOT of sausage!! |

I looked into that exact one, but balked when it said "20 lb capacity (15lb max)."
How did it work out for you?
On the item pictures, it looks like there's a square lug for the handle to bolt onto. If that's the case, there are plenty of spur gears with a square hole and a grub screw that may be useful for motorizing it. |
