Has been kind of dead on this thread for awhile. Thought I would share a couple links to a small griddle I built. This design is for relatively high volume production (1500 pancakes/hr) of low grease foods, (pancakes, eggs, toasted cheese, tortillas, etc). I am currently working a twin as well as one that will be able to handle foods with relatively high fat content (sausage, steak, burgers, etc).
The first link was shot by a newspaper reporter during the start of its inaugural run. A couple neighbors voluntarily pitched in to help. What you can't see is that we were set up directly in front of an open west facing 12' x15' rolling door with a 20 mph west wind. Fortunately the griddle is designed for those conditions and it performed perfectly for 5 hours without a single hitch.

The second link was shot by my son one morning this past winter. The outside air temp was A balmy 25F, and the wind was only about 5mph. Although it was a very short cook, it was long enough to confirm the unit was working well within the theoretical design limits (0 degrees in a 10 mph wind).

It has been a (mostly) fun little prototype project that is turning out far better than I expected.
