I'm doing a 40 OZ Cote de Boef today, using the reverse sear method, question is I'm unsure whether to smoke it with Mesquite or leave it unsmoked?
Any thoughts! |

Reverse sear is good.
A LITTLE smoke is good.
Just don't over cook it......... |

My way for a rib steak that size is basic seasoning then on hot coals with a couple dry wood chunks for a couple mins. each side then move to indirect till 130... |

Cooked it last night and probably a bit too much smoke but cooked perfectly. |
