I've got a 10g 20x30 stick burner. I'm using 2 baffle plates (Lavalock) to help me balance my cc heat mgmt (left & right...or FB and chimney side). Since I'm relatively new to this smoking discipline (25 sessions), I'm still getting wide ranging temp swings from one side to the other. I'm finding that when a new log is igniting the offside spikes. Then after the new log burn settles... the fb side elevates and the exhaust side drops. ?? With my present set up, during a hot smoking I'm not comfortable at adjusting under grate baffles to attempt to balance... & they're not accessible. Here is my question: Horizon makes a sliding convection system that allows the plates to be adjusted during the smoking via a connecting rod which exits at the exhaust side side wall. Have any of you guys experimented with either this system... or something similar? TIA
