Man, oh man..Them 'ribs' look spot-on. Really nice job - All smokey and saucy gooey Laughing I'll have to try and find that rub. I use that brand of Paprika a lot, it's my favorite, but I've never seen the rub. I got some rub from Spain a couple of years ago that was prolly 75% Paprika and it was outstanding.

I did some on the Weber night before last. They didn't turn out as well as I would have liked, but I screwed my fire up and built it too small. Took so long to get them done that I didn't have time to do them up right (dinner was an hour late as it was).

Big O I use a whole chimney of charcoal banked on the side with two chunks of Oak. The 22.5" is running an easy 275°/300° while I am cooking them.
I cut the intakes down to about 1/3 open and the exhaust is wide open over the CSR's

Yeah, I made a rookie mistake and re-used some lump coals I had allowed to go out from the cook before. Should have added more fuel to the pile before I torched it with the weed burner. Like I said, I was in a hurry and didn't plan it through. The ribs were still tasty, but they weren't as tender and juicy as I would have liked them to be.

Ah well, live and learn. Eat the results and live to cook another day. Family didn't complain (I guess if you starve them long enough, they'll eat anything), but they weren't of the quality I like to turn out. It was a last-minute cook at best.

I happen to pick up a package of CSRs today at the grocery store. Came home and searched "Southern Style Ribs" on the forum and found this thread.

I gotta tell you...you guys are awesome! You make me look so good in front of my wife and neighbors you don't even know.

I can't wait to get these bad boys on the smoker for a 30-30/saucy 60. I'll most be likely be tomorrow or Saturday.

Since I aint paying photobucket's ransom, I'll have to post flickr links.
