I am in the last stages of opening my first quick-serve storefront. I've expanded my mobile operation to the point that I need a home base.
I'm going to keep a limited menu. I want to offer a traditional Southern BBQ type sausage.
What would you recommend?
Bratwurst?
Sweet Italian?

I'm not in the business but I would think Andouille might be considered a southern sausage. If you are going to open for breakfast you may consider making your own breakfast sausage. _________________ Chargriller

I wish you luck in your venture my friend.
I would not go with any of the products you listed. They are not Southern...they aren't even American. If you don't know what to offer, call a few meat markets in your area of the state and ask what they make. I agree with you. I was really hesitating on using any of those.

Be careful with your Andouille selection. They may be too spicy for your neighborhood. I still suggest you go with something more local to you if possible. _________________ Somewhere in Kenya...a village is missing their idiot. |

Following this. I have been wondering the same thing and I live just south of you. Seems the only sausage around here people think breakfast or "fair" food such as Italian sausage. Might want to contact "The Butcher at Bon Air". He sells fresh and smoked sausage. Maybe sausage craft as well seems like they will custom make for you not sure of prices for something like that. Best of luck on the new brick & mortar!! Whats the address will have to come by when you open!! |

A good polish sausage may be an option. Its not overly spicy and seems to be fairly popular and its also versatile. _________________ Chargriller

Sausage,like hot dogs is regional. What sells in one area of the country wont move elsewhere....
Find what sells locally and sell that.
