I thought that I'd finally get around to introducing myself. I've been lurking for a while, have made a couple of posts and should of taken the time to do this sooner.

I hail from S.E. Louisiana and do a lot of outdoor cooking. I've been cooking Jambalaya, Gumbo, Etouffee, etc. (dishes all common to the area)for almost as long as I can remember. I have a pretty decent assortment of cast iron pots...in addition to the flat bottom pots, I have round bottoms ranging from 6-1/2 gallons to 30 gallons (with everything in between).

I've been grilling (both direct and indirect) for years and doing low\ slow for the last 3 or 4. I have both charcoal and gas Embarassed for grilling and own an Okie Joe Longhorn for Que. I also have a new trailered rig on order Very Happy .

Bayou Fire here. Got an assortment of jambalaya pots too I cook it on the side for alittle fun money. I'm also looking for a big smoker. What kind did you go with? [if you don't mind me asking] I would like to check it out.I LIVE IN RACELAND LA around houma thibadaux area . Where you at.Maybe we can get together. We'll cook these guys a cajun feast and can share some BBQ secrets HA HA Razz Razz . Check out my post in the cooker section. Keep in touch. THANKS

I'm from Ponchatoula...about midway between New Orleans and Baton Rouge. I've got a Bates pit ordered and should be getting it soon. I'll be more than happy for you to take a look and "kick the tires" on it once I pick it up. We'll have to make arrangements to meet up. I'll keep you updated.

Hi Bayou Black Iron

First I have been to Louisiana a few times and fell in love with the food (Étouffée, Boudin, Andouille etc).

Even went for breakfast at the famed Café De Amis. What an experience. Yall know how to party. I told my wife that when I die and if I am reborn I wanna be born in Louisiana.

If you have any Étouffée recipes you would like to share I am more than willing to accept.

I have been practicing my roux skills and it is coming along ok.

Cant get good food like Louisiana food north of the 49th.

I'm east of Hammond and South of Robert with a Ponchatoula address.
Do you do any competing?
Ponchatoula BCA is in October and Hammond Police will have a BCA in November.
We also have the Hammond KCBS in March.

Hi BBI maybe you can settle a point of interest for me. Or maybe it will open a can of worms so to speak.

To be authentic - do cajuns use tomatoes in thier recipes? Or is this a Creole thing. Some say yes some say no.

Yes we use tomatoes in some of our recipes not gumbo though.

lol never heard that term before. However being a Canadian and not of Cajun DNA I think if I was to use that term I would be shot post hast.
