Been too busy to really do any good smokes for a long time. . .been really wanting to smoke some "bellies"....
Here's the start of good sized batch of belly bacon (22#)..... Did the typical MTQ cure -- most of the belly is unflavored. The rest of it is split out: 2# of garlic butt rubbed. 2# of peppered and 2# of maple....

Five hours into the cold smoke. . . .

The hardest part is waiting for the bacony goodness...so my daughter made us up some awesome bellies marinated overnight in rosemary and garlic.


Fried up, then on a ciabatta roll, with roasted garlic aioli, caramelized onions, and arugula. Was very tasty. . . .and rich.


We needed sustenance whilst enduring the cold smoke. . . .




I'll post the finished bacon pr0n when it's all done. . . .
