To my ol' Smokering Pals
Made some Buckboard and Canadian Bacon on a day that we should have been drinking by the fire....13* Had a great day and made some pizza in the cooker for lunch..hello to all my old buddies I miss you all. Maybe now that I moved Erma Lou to a new spot I will use her allot more......Had some backdraft problems so I talked my buddy into crawling up and turning the stacks..this old man has done his last climbing on the Pitt

Ahhhhhhhhhhh shucks guyz you almost made the old
man cry .....you all made me fell good inside....

I have to tell you guyz a story that will surely bring a smile to your face..my dad is 93 and in a nursing home.....Fathers Day I went to see him and pushed him outside under our favorite tree where we sit and talk about old times....after a while he looked at me and said guess what son.....I said what POP.... he said Delores and I made love in the room last night.....(Delores is the woman he has been with for 40 years she is 89) I looked at him not really knowing how the hell to respond to that.....he seen I was a little dumfounded and said.....it wasn't perfect but it was OK......I nearly fell off my chair...what a guy Laughing Laughing Laughing Laughing Laughing Laughing Laughing Laughing Laughing Laughing Laughing Laughing Laughing

forum are not only very knowledgeable but some of the best
people you will meet .......when I lost my mom they were

You made my day...he was a used car dealer for 50 years and traded-in summer homes.....horses....drumsets...you name it.... a real wheeler dealer.....he loved selling and drinking beer out of a coffee cup. Hell I hope I reach my 90's

We had a great time making pizza in ol' Erma Lou (didn't mean old Mom) I have done some tests with allot of pizza dough on a stone and steel and steel kicks the stone every time.....it is ridiculous how good a piece of carbon steel is to make a great crust on the pizza.....I put it in the box above the fire chamber and WELLLLLAAAAA done in a blink.....

Boomer....I have never seen these baking steels before....must look into that.
Your sliced bacon looks great...I like the buckboard bacon...I like a little fat running through it.

If you read the comparison it is hard not to like the steel......I don't think you need to spend 89 bucs but I just made some ciabatta and Hokkaido bread with the steel and in this ol mans opinion it works..... here (BELOW) are some breads I made on Saturday with the steel in a 500 * oven ..you just gotta watch the bottom of the breads and pizza's cause it is very hot...I have tried the same exact piece in Stainless and the heat transfer is not the same.....Again in my opinion using 00 Caputo Flour for the dough in a hot oven.....you can get close to a New York Style pizza crust brown/blackening on the bottom. I have baked at night and in the morning the steel is still warm to the touch...Gotta try the bacon we made on a pizza the picture up top was an eye of round of venison that my buddy Joe cured and smoked and shaved for the pizza..... it was very tasty.

Thanks...... it was a long day ...but there was ho-made Lemoncello.... Orangecello.....Roots and some Apple Pie Boilo "nectar of the Gods" that makes you "SEE DOUBLE AND FEEL SINGLE" so as cold as it was Joe and I was good to at least -10*......I was hoping someone would have jumped on here and told me about real Canadian Bacon rubbed with Cornmeal ..I think that they call it Peameal...don't know if they still make it that way or not
