good day to the group, a friend of mine had a little butcher shop make him some skinless smokies, and they were great, but my question is how are these made, and how would you go about making and smoking them with out them falling apart, thanks

I think you are looking for something like this:

An artificial removable casing will allow you to smoke/poach your sausage, bloom, then when cooled you can peel it off. The large producers use plastic molds which are reusable. I have no idea where to find those so I think this option is best. You can buy other sizes here:
