I was asked to cook for a graduation party and the preference was Fajitas!
I decided to take my griddle on the road, since it would be easier to cook on than a grill. I had limited amount of time as well, so the griddle seemed like a perfect solution Smile

I precooked the rice at home and then fried it on the griddle before serving

The chicken breasts were cut up into strips and marinated overnight

Thinly sliced ribeye meat and marinated overnight as well. I cooked the meat in batches at the party

Served the rice with Mexican beans

And the meal was served Very Happy

Of course we had a separate table for all the usual accompaniment- salsa, guacamole, chips, lettuce, tomatoes, cheese...etc.
It was the easiest and quickest cookout I did in a while, thanks to the Griddle Very Happy

Well done Z! That's a lot of nice looking chow right there! Those flat tops sure can power through a lot of food in a pretty short time!
