We were taken this afternoon (by my wife's nieces) to this restaurant where the locals eat. We are about 4 hours North of Manila in the Philippines this week. Last week was spent in Tacloban. I ordered the spicy, hot Lechon Manok (BBQ Chicken)


They go here because it's unlimited rice, free soup (sinigang), Peppers (Silli) and calamansi (a cross between a lemon and sweet grapefruit. a truly unique juice).
That amber liquid beside the soy sauce is chicken grease!! These people don't mess around




Now for the custom made hot sauce. you start out by crushing the peppers under a spoon...


squeeze in the calamansi juice...


Add the soy sauce


Now you have some awesome tasting fire to spread on the food. The chicken broth in the bowl (sinigang) has a slight vinegar bite to it and is used to flavor the rice.


Heaven!!




I have another hog roast to share but I have to take the 95 pictures down to something more realistic. My next big adventure is borrowing a motorcycle and strapping a gopro on my head

That chicken with the table made hot sauce sounds awesome.

Hey, can you take a moment to check out this topic? A fellow ringer down in the Philippines is trying to locate a drum to make a UDS. Maybe you have some connections there???

I replied. I assume after he acquires a drum, finding a domed lid for grilling will be as big a hunt as the food grade drum. I'm just a tourist. He knows his neighborhood better than me. I will ask my family though

Thx guys. I'm currently in the Barangay with the family chilling in front of a fan watching them smell up the house cooking dried fish and drinking homemade coconut wine
