I am looking to try something new. Any interesting tried and true pork butt brine recipes out there? I have been using the same one for several years. Works well, but feel like trying something new. Hit me!

Why brine a meat that is already moist?
I don't, I like the flavor of the meat to come through.

Just smoked 2 bone in butts - about 13 & 14 pounds each. Brined with coriander, lime, apple cider vinegar, bay leaf, salt, sugar for about 18 hours. Best butts we've done (15 years of this)!

I think the citrus is a keeper. Muscle had a paler, more tender look and feel to start.

10 hours almost on the dot, cooked at 240-250 and pulled at about 190 and 192 degrees. 5, 3, 2 method and used a pan and foil to cover for the 3, open air for the 2. Perfect flavor, tenderness and juice.

That brine is a keeper. It was a really good quality meat to start.
